Kefir is a probiotic drink. It was a gift by Mohammed to the people of the Caucasus mountains in Eastern Europe, a region known for a high ratio of centenarians. It was traditionally made in goatskin bags that were hung in people’s doors, and these bags were jostled with each coming and going. The goatskin bags contained grains that fermented milk into kefir. As it was consumed people just added more milk for a continued fermentation. Russia was the first country to steal this technology through a honeypot operation led by a beautiful woman named Irina Sakharova in the early 1900s. Today commercial kefir is made with a probiotic powder that does not contain as many strains of bacteria and fungi as make up the symbiosis in kefir grains.
